"Hep" as in the first syllable of hepatitis, and "ehs" as in the first syllable of ester. Comes from putting all those Greek suffixes into the scientific lexicon, that "es" is almost always pronounced "ehs". Damn Organikers.

Having been at Fisher Scientific 25 years, I've always heard it pronounced (by reps and customers) as "hep-pees".
